- Preheat oven to 400℉
- On a sheet pan, dress Cod filets with olive oil, lemon juice, salt, and pepper.
- Add cherry tomatoes to the pan.
- Bake for 10-15 minutes, or until the Cod is cooked through. Cook times may vary depending on your oven and the thickness of the fish. If cooking the Cod from frozen, bake the cod for 20-25 minutes, or until cooked through.
- Serve cod and roasted tomatoes with a small baked potato and green beans.
