1. Start with 1 cup of lactose-free dairy milk or 1 cup of non-dairy milk (such as unsweetened almond milk), add ¼ cup chia seeds, 1 tsp vanilla extract, 1-2 tsp pure maple syrup, and mix well. This will make 2 servings.
  2. Cover mixture and refrigerate overnight 
  3. Scoop half of the mixture into a bowl, and top with fruit ( ½ cup blueberries, ⅓ of a sliced banana, or ⅓ cup raspberries), 2 Tbsp chopped walnuts, and a sprinkle of cinnamon.
